Today, directly from the kitchens of the Hotel Elios in Bellaria Igea Marina, we want to share with you a recipe from our tradition! We will talk about Cantarelle: a typical dessert of Romagna during the holidays.
It is a sweet always present in village feasts and festivals, cooked directly from our azdores: the housewives of Romagna… keepers of our ancient culinary traditions! You will not be disappointed, they delight everyone, young and old, and you can enjoy them in a riot of simple, but exquisite flavours!!!
The preparation is very simple to perform and suitable to all levels. It is a simple preparation, when, in the old poverty, with few ingredients, it was possible to do magic! Delicious scones, reminiscent of modern pancakes in shape and baking, but 100% from Romagna!!! In a short time they will be kneaded and cooked, ready to be eaten on the table or while walking: “They are made by preparing a simple batter, which after a short rest, is cooked on the Romagna griddle, or in a pan”

Ingredients:
500 gr water
250 gr yellow polenta flour
250 gr plain flour
3 spoons of extra virgin olive oil
1 pinch of salt
Bicarbonate of soda
Icing sugar
Preparation:
"Put the water, a pinch of salt and baking soda, oil, yellow flour in a saucepan. Pour in, mixing carefully, the white flour so as not to form lumps, until you reach a thick but rather fluid batter.
With a small ladle pour the mixture onto a hot pan, forming small disks with a diameter of about 10 cm.
Cook the disks until golden on both sides.
When cooked, place the disks on a serving plate and season with extra virgin olive oil.
As a final touch, sprinkle them with icing sugar.
If you have an especially sweet tooth, you should spread your cantarelle with jam or honey."
